Assignment 15- Andrew Rogers

I've got this thing for potatoes. I believe I may have addressed this a little earlier in one of my other blog posts, but I'll expand on it now. Ever since the end of the summer before my sophomore year, I've been fascinated with the history of this legume. It started when I read 1493, a book about the results of the Columbian exchange (really good book by the way). They had an entire chapter dedicated to potatoes, a full 45-50 pages about potatoes. I was indifferent when I entered those pages, but I exited a changed man. I had been enlightened about how a small plant from Central and South America traveled the world, utilizing its toughness to provide nourishment to the poor in Ireland to Western China. It's amazing to think that something I had taken for granted on a daily basis changed the world. I was so intrigued I did more research on the history of this little plant. I won't bore you with the details, but the potato has had such profound impact on so many people, and I am lucky to call myself one of them.
